Tim Stein has over 25 years of experience in the food, beverage, and hospitality industries as a consultant and foodservice operator. His dual passions for food and sustainability drive his desire to work with others to embrace and navigate the myriad environmental
sustainability issues and rapidly changing food landscape. He is well versed in sustainability issues surrounding food, energy, food supply, beverage, packaging, waste, recycling, and water use.
Tim was the corporate director of food & beverage for a national hospitality company where he implemented a leading sustainable cuisine program and developed the first LEED Certified restaurant within a national park. He successfully launched the first US partnership with the Marine Stewardship Council to achieve Group Chain of Custody for the service of wild Alaska salmon on numerous menus.
Tim worked as a consultant for two leading hospitality organizations with many well-recognized clients such as The American Club, Callaway Gardens, Caesar's Palace, Stanford University, Universal Studios, UC Berkeley, Grand Canyon National Park Lodges, Sandestin Resort, Isle of Capri Casinos, and the US Military.

US Green Building Council Leadership in Energy and Environmental Design (LEED) Silver Certification for the Annie Creek Restaurant at Crater Lake National Park, OR
Marine Stewardship Council (MSC) Group Chain of Custody Certification - Xanterra Parks & Resorts was the first US hospitality company to receive this certification for procuring and serving sustainable wild Alaska salmon.
Seafood Choices Alliance - Seafood Champion for adding ocean-friendly seafood choices to the Xanterra Parks & Resorts' menus and implementing a broader seafood/fish policy.
